The name serrano, refers to the mountainous region (sierras) of Puebla in Mexico.
The serrano is like a smaller, hotter version of the jalapeno, similar in color, but only 1 to 2 inches in length.
Mature plants reach a height of 1-1/2 to 5 feet tall. Each plant can hold up to 150 pepper pods.
The serrano ScovilleHeat Unit rating (SHU) is between 10,000 and 25,000. Variable weather and climate will affect the zing.
The flavor is crisp, bright, and biting, notably hotter than the jalapeno , and they are typically eaten raw. Serrano peppers are also used in making pico de gallo and salsa. One of my favorites.
They are meaty peppers and are not the best choice for drying.
